1 pkg. Jell-o sugar-free/fat free chocolate pudding mix--(4 serving size) 2/3 cup carnation nonfat dry milk powder 1 1/3 cups water 1 1/2 tsp. Coconut extract 1 cup Cool Whip Free 1/4 cup chopped almonds--(1 oz) 1 Keebler reduced fat graham pie crust--(6 oz size) 1 Tbsp miniature semi-sweet chocolate chips--(1/4 oz) 2 Tbsp flaked coconut
In a medium bowl, combine dry pudding mix and dry milk powder. Add water. Mix well, using a wire whisk. Blend in 1/2 tsp. coconut extract and 1/4 cup Cool Whip Free. Add almonds. Mix well. Pour mixture into piecrust. Refrigerate for about 15 minutes. In a small bowl, combine remaining 3/4 cup cool whip and remaining 1 tsp coconut extract. Spread mixture evenly over filling. Sprinkle mini chocolate chips and coconut evenly over top. Refrigerate until ready to serve.
