Healthy Recipe: Fresh Fruit Tarts

Happy Valentine's Day! Need a quick and easy, delicious and healthy recipe for that special evening at home?  Well, decadence can mean healthy eating, too! Today's dessert appropriately comes from the American Heart Association, which means you'll really be showing just how much you care about the loved ones in your life. With raspberries, red grapes, and strawberries, these fruit tarts will win the heart of any valentine.  Here's to your health!

Makes 6 servings or 6 tarts

1/2 cup nonfat or low-fat sour cream
2 tablespoons confectioners' sugar
1 teaspoon chopped fresh mint or 1/4 teaspoon dried mint, crushed
4-ounce package single-serve graham cracker crusts (6 small crusts)
1 cup assorted cut-up fresh fruit 1/3 cup nonfat or low-fat lemon or raspberry yogurt

In a small bowl, stir together sour cream, confectioners' sugar, and mint. Spoon into graham cracker crusts. Arrange fruit over sour cream mixture (use raspberries, red grapes, strawberries for Valentine's Day, assorted for other occasions).

Serve immediately or cover and refrigerate until serving time. Just before serving, stir yogurt and drizzle over fruit.  Chocolate lovers can add another drizzle of melted sweet or semi-sweet chocolate chips.
