Quick Turkey Sandwich
Original Recipe

Let’s face it, this is a classic. Easy and quick to prepare, this recipe adds a twist by adding goodies like snow peas and sweet peppers. A delicious fat-free yogurt and horseradish mustard spread adds a tangy taste. Try substituting whole grain bread with pita bread or a flour tortilla and make a delicious turkey roll instead.

Ingredients:
1 tablespoon plain fat-free yogurt
2 teaspoons horseradish mustard
2 slices multigrain bread, toasted
Lettuce leaves
2 to 3 ounces sliced cooked fat-free turkey breast
2 slices tomato
1 thin slice of sweet yellow pepper
6 fresh snow pea pods

Steps:
Stir together the yogurt and mustard. Spread onto the 2 bread slices. Top with lettuce, turkey, tomato, sweet pepper, and pea pods. Makes 1 serving.

Broccoli and Turkey Casserole
Original Recipe

Substitute chicken with turkey for a meal that’s delicious and extremely easy to prepare. Some shredded Swiss cheese adds a distinctive taste to this creamy casserole dish, but you can try other varieties such as Cheddar if you prefer.

Ingredients:
4 ounces dried medium noodles
2-1/2 cups chopped cooked turkey
1 10-ounce package frozen chopped broccoli, thawed
1/2 cup sliced green onions
1 10-3/4-ounce can condensed cream of mushroom soup
1/2 cup skim milk
1/2 cup shredded Swiss cheese (2 ounces)
1 teaspoon dried basil, crushed
1/8 teaspoon pepper
Paprika

Steps:
1. Cook noodles according to package directions. Drain well.
2. In a 2-quart casserole stir together noodles, turkey, broccoli, and green onions.
3. In a medium mixing bowl stir together soup, milk, cheese, basil, and pepper. Stir into noodle mixture.
4. Bake, covered, in a 350 degree oven for 40 to 45 minutes or until heated through. Sprinkle with paprika. Makes 6 servings.
5. Make-Ahead Tip: Prepare casserole; cover and chill up to 24 hours. Bake as above.

Turkey Fajitas
Original Recipe

A delicious and simple twist on a popular Mexican dish. Substitute Chicken with turkey for a healthy and surprisingly tasty treat. Arriba, Arriba!

Ingredients:
1 pound cooked turkey breast
4 (8-inch) corn or flour tortillas, heated
2 cups shredded iceberg lettuce
1 tomato, diced
1/4 cup prepared salsa
1/2 cup avocado dip or prepared guacamole
1/4 cup sour cream

Steps:
Slice turkey crosswise into strips. Divide evenly among warm tortillas and top with lettuce, tomato, salsa, avocado dip and sour cream. Makes 4 servings
