8oz sugar
8oz plain flour
6oz. butter
One egg
 
Sitr together the sugar and the flour, rub in the butter and mix to a paste with the egg.
 
Roll out thinly.
 
Cut into rounds and bake at 350 deg.F/180 deg. C/gas 4 for 10 minutes.
 
This is a form of shortbread, which can also be flavoured with ginger.  The biscuits were traditionally eaten at the Tombland Fair in Norwich and at Yarmouth Easter Fair.
