Pork Fillet Roulade

Ingredients

1 whole pork fillet
200g minced beef
1 brown onion, finely diced
½ a cup of bread crumbs
2 tsp horseradish
10 capers
2-4 anchovies
½ cup of chopped basil
1 egg
Salt and pepper

Method

1. In a large bowl combine all the ingredients (except the pork,) and massage together.

2. Trim the pork fillet of all fat and sinew, cut down the middle then bash with a meat mallet until thin.

3. Lay the mince mixture onto the thin pork, then roll over until a roulade is formed, wrap with oiled foil and place in an oven tray with about an inch of water, cover with foil and bake at 200 degrees for 30-45 minutes.
