Layered Cheese Wheel

Nine 8 oz. packages cream cheese

6 T. half-n-half

6 T. sour cream

4 C. pecans lightly toasted

12 oz. brie, rind removed

3 C. Swiss cheese

12 oz. blue cheese

Line three 9 inch tart pans with moistened cheesecloth. Set aside.

Combine 3 packages cream cheese, cream and sour cream together using a mixer or food processor. Beat until smooth. Spread into prepared pans. Sprinkle with pecans.

Combine remaining cream cheese, brie, swiss cheese and blue cheese. blend until smooth. Spread over pecans gently. Fold edges of cheese cloth over top of cheese wheel.

Wrap in plastic and refrigerate at least 3 days.

Serve with crackers and pear or apple slices.

Serves 48 to 60 as an appetizer.

Note: Put one out at a time and refill as it gets empty.
