Holly's Elegant Roast Beef
Oh Logan you are going to LOVE this!! Or I hope you do... and if you don't, tell me the truth. It's a Southern Living recipe.
Use a eye of round roast or large rump roast. Take your meat and sprinkle garlic powder, and pepper over the meat and rub it in. Place it fat-side up in your bakewear and put it on the top shelf of your oven. Set your oven to Broil and let it sear in the juices of the meat. Be careful not to let it burn. It won't be there for long.
While that is searing, on the stovetop, mix together
Let all of these come to a boil and the butter melt. Once this is done, take your meat and drop it to the next shelf down in your oven. Pour the wine mix over the top of the meat and be sure the lemon pepper gets out of the pan too. Drop the temp of your oven back to 350 deg. F. Bake for as long as you prefer your meat done. Jack likes it well done so for him I cook it 2.5 hours, but I prefer it less well done and will go as little as 1 - 1.5 hours. Persnal choice.
Occassionally open up your oven and drizzle some of the sauce over the top of your roast. Your house will smell SO good!! Also when you serve it, use some of the sauce over the meat. I especially like the sauce with my baked potato too. Is also good to sop up with bread or dinner rolls.
