Crockpot Meatloaf Dinner


Ingredients:

2 egg whites
1/4 cup skim milk
2 slices day old bread, cubed
1/3 cup chunky salsa
1 1/2 pound ground eye of round beef
1/4 cup ketchup
8 medium carrots, peeled and cut into 1" cubes
12 small red potatoes



Directions:
Spray crock pot with nonfat cooking spray.

In bowl, beat together the egg whites and milk. Stir in bread cubes and salsa. Add beef and mix well.

Shape the beef mixture into a round loaf and place it in a crock pot. Spread the ketchup on top of the loaf. Place the carrots and potatoes on top.

Cover and cook on high for 1 hour. Reduce the heat to low and cook for 7 to 8 hours longer until the meat is browned and the veggies are tender.
