POTATO CANDY
 
1 small potato, peeled and boiled
1 pound powdered sugar - more or less depending on size of potato
peanut butter
 
After potato is boiled mash well with a fork.  While it is still hot, add powdered sugar a little at a time.  It will turn to liquid, at first.  Keep adding powdered sugar until it is pliable and rollable.  Kneading isn't necessary, but a little helps smooth out the candy.  Roll out into a thin sheet like you would a pie crust about 6" wide and al long as necessary.  Spread with peanut butter and roll up like a jelly roll ( from the long side ).  Refrigerate and slice as thick as you like.  We do ours about 1/4" thick.  This candy is awesome!
