Description
Cranberries have become as much a part of the holiday season as the turkey and they're just as American. They were probably first used as a food by Native American Indians. This berry is unique in that it's one of the few things that we eat that actually grows in wet bogs. They were first dubbed "crane berries" because cranes tramping through cranberry bogs knew a good thing when they saw it. They gobbled up the luscious fruit. Because cranberries grow in a bog, harvesting them can be quite a challenge, but this year's crop is in and now they're here, fresh and ready to enjoy.

I love the flavor of cranberries and I'm always looking for unique ways to use them. Recently, I came across a recipe for a cranberry salsa. Now I know we usually don't associate salsa with the holidays or cranberries, but this is a delicious, easy to make recipe that doesn't take much time. And who knows, once you try it, this twist on the classic recipe might just become a new tradition in your home.
Ingredients
12 ounce bag of cranberries
4 tablespoons fresh cilantro chopped
1/3 cup lime juice
1/2 teaspoon salt
1/4 teaspoon pepper
2 mined jalapeno peppers - minced
2 tablespoons grated onion
1/2 cup sugar
Instructions
Begin by blanching the cranberries. Now this only takes a few minutes. You want to cook them only long enough for them to begin to pop and split open.

Drain them in a colander, and then put them in the blender.

Next add the remaining ingredients to the blender - the fresh chopped cilantro, lime juice, salt and pepper.

Then add the minced jalapeno peppers and grated onion to give the salsa some zip and the sugar to bring it all into balance.

Blend this together, then put it in a container and chill it in the refrigerator. That's all there is to it. It's delicious served with cream cheese and crackers.

Even though we don't grow cranberries in our backyard, they certainly have the flavor of the holiday season.
Notes
The holiday table would not be complete without cranberry sauce, but if you are looking for something a little different try this cranberry salsa. It is a simple way to spice up your meal.
