Coconut Pie
2 cups milk
1 cup sugar
4 eggs
1/2 cup all-purpose flour
6 tablespoons butter
1 teaspoon vanilla extract
1/2 teaspoon salt
1 cup flaked coconut
In a blender or food processor, combine the milk, sugar, eggs, flour, butter, vanilla extract and salt. Cover and blend for 10 seconds; scrape sides. Blend another 10 seconds. Add the coconut and blend for 2 more seconds.
Pour into a greased 10-in. pie plate. Bake at 350° for 50-55 minutes or until a knife inserted near center comes out clean. Serve warm. Refrigerate leftovers. Yield: 6 servings
