Slap your Mama Good First I brine the chicken in salt water overnight
then I soak chicken in Buttermilk
approximately 8 hours (give or take)
I season the flour with
Garlic Powder, Kosher Salt, Pepper, Celery Salt & Paprika.
Flour the chicken and let it dry off a bit, 5 minutes or so. If you like it extra crispy, dip in flour again (not the buttermilk) let it rest and then pan fry as usual, about 35 minutes
I fry in Crisco Oil but some people say the solid
shortening is better, I can't really tell the differnce
If you have a Seasoned cast iron pan it is extra good
