Corn "Oysters" 2 egg yolks, slightly beaten 2 cups freshly grated corn from the cob 1/2 teaspoon salt 1/4 teaspoon pepper 1/4 cup all purpose flour 3 egg whites, stiffly beaten | Combine egg yolks, corn, salt and pepper in a medium sized bowl. Mix in the flour. Fold in the egg whites. Heat a well-oiled skillet over medium heat. When the skillet is hot, drop batter by tablespoonfuls. Brown on both sides. Serve at once. Makes about two dozen oysters |
