The Best Chicken Salad
2 boneless chicken breast halves, cooked (I used the rotisserie chicken from Supermarket already cooked for you)
1/4 cup creamy salad dressing (like Miracle Whip)
4 tablespoons bottled cole slaw dressing
1 stalk celery, chopped coarsely
1/4 onion, chopped coarsely
salt and pepper to taste
Place in a food processor and combine the chicken, creamy salad dressing, cole slaw dressing, celery, onion, and salt and pepper. Mix until well chopped. Serves 6.
Variations:
Stir in any or all of the following to add variety to this chicken salad: 1 cup seedless halved grapes, 1/4 cup slivered almonds, 1/4 cup grated mild cheddar cheese, 1 tablespoon grated onion and or 1 tablespoon fresh lemon juice.
