Cheesey Potato Soup 
  2 C water 1 1/2 t salt  4 medium potatoes, peeled and chopped  2 stalks celery, chopped  1/4 C chopped onion  1/4 C grated carrot  21/2 C milk  3/4 C margarine 3/4 C flour  1 C shredded cheddar cheese
  Boil veggies in salted water till tender. In sauce pan, combine milk and margarine. Heat over med heat till margarine melts. Using a wisk, add flour a little bit at a time. Let heat till bubbly and thick. Add cheese, stir till melted. Combine cheese sauce and veggies and heat thoroughly. 
  This is good with homemade bread on a chilly day  |
