Barbecued Salmon

The ideal way to barbecue a whole salmon - fast and easy - AND delicious!!

Ingredients:
1 whole salmon - butterflied*
2 Tbsp. butter, softened
juice of 1 lemon
2 tsp. dry mustard
2/3 - 1 cup brown sugar

Instructions:
*To butterfly salmon: Remove head, tail and fins. Run sharp knife down backbone until salmon opens flat. Place skin side down on sheet of foil.(double thickness)  Spread butter over fish. Sprinkle liberally with lemon juice and mustard. Cover with 1/4 - 1/2" brown sugar.
To Cook:Place on barbecue, lower lid and cook over low heat for 20 - 30 minutes. Salmon is cooked when flesh is just opaque and flakes. DON'T OVERCOOK!
Serves 6-8

They will lick the plates!!!

Oven-Poached Salmon Fillets

Makes 4 servings
ACTIVE TIME: 10 minutes
TOTAL TIME: 30 minutes
EASE OF PREPARATION: Easy

1 pound salmon fillet, cut into 4 portions, skin removed, if desired
2 tablespoons dry white wine
1/4 teaspoon salt
Freshly ground pepper to taste
2 tablespoons finely chopped shallot (1 medium)
Lemon wedges for garnish

1. Preheat oven to 425 F. Coat a 9-inch glass pie pan or an 8-inch glass baking dish with cooking spray.

2. Place salmon, skin-side (or skinned-side) down, in the prepared pan. Sprinkle with wine. Season with salt and pepper, then sprinkle with shallots. Cover with foil and bake until opaque in the center and starting to flake, 15 to 25 minutes, depending on thickness.

3. When the salmon is ready, transfer to dinner plates. Spoon any liquid remaining in the pan over the salmon and serve with lemon wedges.
