This makes a pretty good size meatloaf, so with just son and I eating I divide the mix in half and cut the baking time a bit, and freeze the other half so we have one ready to thaw and bake as the urge strikes.
2 lbs gr. sirloin
1 lb ground pork
1 can mild rotel
1 small can chopped jalapenos
1 lrg finely chopped onion
llrg egg
15 crushed crackers (club, ritz or saltines)
1/2 cup ketchup
4 or 5 slices bacon
Mix up everything except bacon and shape into a loaf, top with the bacon and cover with foil. Bake at 350 for 2 hours. Drain off grease, let cool 15-20 minutes before serving.
