Maui Banana Bread
INGREDIENTS
�?1/2 pound (2 sticks) unsalted butter, softened, or 1 cup vegetable oil
�?2 cups sugar
�?4 large eggs
�?6 medium very ripe bananas, peeled and mashed
�?2 1/2 cups unbleached, all-purpose flour
�?2 teaspoons baking soda
�?1 teaspoon salt
�?1/2 cup chopped macadamia nuts
DIRECTIONS

1. Preheat the oven to 350°F. Grease two 9-inch loaf pans.
2. Combine the butter with the sugar in a large bowl. Using electric beaters, beat the mixture until creamy and pale yellow. Beat in the eggs, one at a time, then add the bananas.
3. Sift together the flour, baking soda, and salt into a medium bowl. Add to the banana mixture and stir until incorporated. Mix in the nuts. Divide the batter between the two prepared pans and bake for 50 to 60 minutes, or until a wooden skewer inserted into the center of one loaf comes out clean. Let each loaf cool in its pan for 10 minutes before inverting onto a wire rack to cool completely.
