Ingredients
2 cups baking mix
2 tablespoons light brown sugar
2 teaspoons cinnamon
1 teaspoon ground allspice
1 (12-ounce) can evaporated milk
1/2 cup solid-pack pumpkin
2 tablespoons oil
2 eggs
1 teaspoon vanilla
Instructions
In large mixing bowl, combine baking mix, brown sugar, cinnamon and allspice. Add evaporated milk, pumpkin, oil, eggs and vanilla. Beat until smooth. Pour 1/4 to 1/2 cup batter onto heated, lightly greased griddle. Cook until top surface is bubbly and edges are dry. Turn and cook until golden brown. Serve warm with syrup or honey, if desired.
