Ricotta Cookies
1/2 lb. butter
1/2 cup ricotta
1 tsp. vanilla
1 cup sugar
1 egg
2 cups sifted flour
1/4 tsp. baking soda
1/4 tsp. salt
Allow butter to soften. Blend with ricotta until creamy. Add vanilla
and mix well. Add sugar gradually, beating until well blended. Add
egg and mix well. Slowly stir in dry ingredients and blend well. Drop
from a teaspoon on greased baking dish. Bake in moderate oven for 10
minutes. Yields 30 to 36 cookies depending on size.
