Pumpkin Pecan Cheesecake
2 cups mashed pumpkin
1 10 oz package cream cheese
1/2 cup milk or vanilla soymilk or ricemilk
3/4 cup chopped pecans
2 eggs, beaten
1/2 cup sugar
1/4 cup rum (optional)
1 teaspoon cinnamon
1/4 teaspoon nutmeg
Combine all ingredients, pour into graham cracker crust. Bake at 325 degree for one hour, or until a knife inserted in middle comes out clean.
