Easy Homemade Vanilla Recipes
Vanilla is one of the most popular flavorings in any type of baking. Yet, buying it in the pure form can also be expensive. Try creating your own vanilla extract with these simple recipes.
Not sure where to find vanilla beans? Don't worry -- many supermarkets now carry the beans OR you can find them at online gourmet food stores, or even auction sites such as eBay.
Vanilla Extract #1
4 or 5 vanilla pods
2 cups bourbon, vodka, or brandy
With a large chef's knife, cut each vanilla bean lengthwise in half and put them in a screw-topped jar with two cups of the alcohol. The bourbon or brandy adds its own flavor, enhancing the vanilla, not smothering it. The vodka has a milder flavor that is nice with delicate cakes. Cover tightly and let stand for two weeks or longer to achieve a full vanilla flavor.
Vanilla Extract #2
6 vanilla beans, split
1 (fifth) bottle vodka
Combine split beans with vodka in a 1-quart glass jar. Store jar in a dark, cool place for a minimum of 2 months, however, the longer time stored, the stronger and better flavored your homemade vanilla will be. Some prefer to store homemade vanilla for up to 1 year before using, as the flavor will grow in intensity. Makes 1 quart.
