Microwave Peanut Brittle An easy treat any time of year.
- 1 cup sugar
- 1/2 cup light corn syrup
- 1 cup raw peanuts
- 1/8 teaspoon salt
- 1 tablespoon butter
- 1 teaspoon vanilla
- 1 teaspoon baking soda
In a 2-quart microwavable bowl, combine sugar, corn syrup, peanuts and salt. Microwave on high for 8 minutes, stirring after 4 minutes. Add butter. Microwave on high for 2 minutes.
Stir in vanilla and baking soda until light and foamy. Spread on a buttered baking sheet as thinly as possible. Cool and break into pieces.
Makes 1 pound.
