Cheesy Broccoli Casserole Recipe Summary

Ingredients
2 (10-oz) boxes frozen broccoli florets, thawed
1 (10-3�?-oz) can condensed cream of mushroom soup, undiluted
1�? cup mayonnaise
4-oz shredded Cheddar cheese (1 cup)
2 large eggs
1 small onion, chopped
48 round buttery crackers, crushed (2 cups)
1 stick margarine, melted
Directions
- Preheat oven to 350°F. Coat 13" x 9" baking dish with nonstick cooking spray; arrange broccoli in dish.
- Combine soup, mayonnaise, cheese, eggs and onion in medium bowl; stir to mix well. Spoon evenly over broccoli.
- Combine crackers and margarine in medium bowl; stir to mix well. Sprinkle over soup mixture. Bake, uncovered, 30 minutes or until sauce bubbles and topping is lightly browned.
Additional Information
If you want to change up this dish, simply substitute cauliflower for the broccoli or use half of each like Vondel sometimes does.
