Apple Pie

 

Crust: 2 c. all-purpose flour 1/4 c. shortening 3-4 T. water pinch salt Filling: 4 c. peeled and thinly sliced apples 1/4 c.all-purpose flour 1 can unsweetened frozen apple juice 1-1/2 t. cinnamon

Combine salt and flour in med. bowl. Cut shortening into salt/flour mixture with pastry blender. Add water. Blend with fork until dough forms into a ball. (More or less water may be added/deleted as needed.) Divide dought into two equal pieces. Roll one half out on floured surface, fit into 9 in. pie pan, trim and discard excess. Roll second half out large enough to cover top of pie pan, set aside. Mix 1/4 c. flour and cinnamon together. Place apples in large bowl. Sprinkle them with the flour/cinnamon mixture and stir to coat all pieces of apple. Turn apples into pie pan. Spoon apple juice on top of pieces -- distribute evenly. Place crust on top of apples and seal edges. Cut 4-5 slits in top to vent. Bake in oven at 400 degrees for 45 - 60 minutes.
