I made these this morning for our brunch. Because I love it, I always have buttermilk in the fridge. This was the first time I'd made this recipe and it was yummy.
1/4 c. butter, softened
1 c. brown sugar, packed
1 egg, beaten
1 c. buttermilk
1 c. oatmeal
1 c. all-purpose flour
1 T. baking powder
1/2 t. salt
1/2 t. allspice
a pinch each of cinnamon and nutmeg
dash of vanilla
2-3 medium bananas, mashed
1. Cream together butter and brown sugar. Mix in buttermilk and egg.
2. Mix together oats, flour, baking powder, salt and spices. Add to creamed mixture.
3. Stir in bananas.
4. Spoon into greased muffin pans, filling cups almost full.
5. Bake at 400-425 degrees F for 20-25 minutes until golden brown.
