RECIPES! : Slow-cooker Pot Roast Soup

2.5 lb. boneless beef chuck pot roast
2 c. chopped onions
1 (14.5 oz.) can diced tomatoes
1 c. frozen shredded hash brown potatoes
1 c. ready to serve beef broth
1 T. minced garlic
1/2 tsp. salt
1/4 tsp. pepper
2 cups broccoli slaw
1/2 c. frozen peas

Cut pot roast into small bite size pieces. Put in slow-cooker. Add onions, tomatoes, hash browns, beef broth, garlic, salt, pepper, and broccoli slaw. Cover and cook on low for 8 hours. One hour before serving, stir in peas.

You might want to substitute another veggie, like carrots or whatever you like that takes a while to cook in place of the broccoli slaw. As for the onion, I think you could go without it. I usually cook onion with my roast, well always. They are soft and not so strong. Well shoot, I've only had the soup once so I really don't know. LOL Let me know how it turned out and what you substituted.
