I am really trying to eat better, and convice hubby to also. But it is soo hard after a long day at work to come home and cook a healthy meal and not just throw something in the oven or microwave. I have also been going to the gym. What can anyone recomend that wont sabotage my working out but is healthy and quick?

Egg-white omelets do in a quick moment.   You can add any veggie to them.  I keep ziplocks filled w/ pre-cut veggies (works for salads).  You can throw cheese on top, too! They're healthier than using whole egg.  I buy the whites in a container like a milk one, saves me time when I'm knackered after work.  Takes like 7 minutes total to saute veggies & fluff eggs in them to cook.
 
Raw nuts added into veggies are great, too.  Walnuts, pecans, almonds, even cashews work great in stir-fry veggies.  In salads they add texture and go great with cheese crumbles.
 
Hummus is quick & cheap to make.  Gabanzo beans cost like 59 cents.  Salt, paprika, drops of lemon juice, couple drops olive oil & minute in a blender.  Hummus can be put on anything - grilled sandwhich, slathered on veggies or falafel. 
 
Sole (fish) is quick to do & extremely versatile.  Can be rolled up with herbs in the middle & baked (10 minutes), cut in strips & breaded crumbed for fish sticks, grilled on stovetop in olive oil, lemon juice, onion slices & dill (4 minutes).  Around here its a cheaper fish to purchase.

wow..  I never thought of all that.. lol.. shows how well we eat around here.. I seem to do the same old thing.. meat, potatoes and veggies... and if I try to get healthy it is chicken and rice with veggies..lol
I will definitely have to try some of those..

Do you have a crock pot? There are a lot of good recipes for these.  Slow cooked food is very tasty and is ready when you get home.
 
When you cook, double the recipe.  Many items freeze quite well.  Then when you come home from work, simply take the item(s) out of the freezer and nuke them.  It's a regular meal at half (or even less) the time.

I have a crock pot but no time to use it. There is no guarantee of what time we will be home so I am afraid to leave it on all day. So the only time I use it is on weekends when I can put something on and let it cook all day.

Ok, thought most things cooked in a crock pot can sit a few hours extra without any issues if that's an option.  Otherwise, double your recipes on weekends, whether it is crock pot or on the stove.  Put them in individual serving containers (or family size, as needed) and freeze. When you come in from work, simply reheat. 
 
Plus,  I also really like Taco Salad...simple, but yummy.
 
Ingredients:
2 lbs Hamburger, browned and drained
1 med onions, chopped, browned with hamburger
Add 1 can Red Kidney beans to drained hamburger mixture and heat.
 
In a separate large salad bowl, add:
Lettuce (shredded) approx 1/2 head
Tomatoes (cubed) ( I generally use 3 or 4)
1 bag Nacho Cheese Doritos, crunched (smash them before you open the bag).
Catalina dressing to taste (quite a bit but again, just don't over do it).
 
At the last minute, mix this all together and serve. Simple, but yummy.
 
You can keep the items separated also, and simply mix them on each individual plate. This allows you to keep the items refrigerated and simply reheat. Otherwise, the  lettuce gets soggy.
 
I am cooking for 5 people, so you may want to use less of each item.  It's kind of a "per taste" thing.  Don't overdo the Catalina, but get enough on there to flavor it.
