| Toad in the Hole is a homey little dish from England. Originally it was made with any leftover bits of meats, |
| but today sausages are the usual "toads". The batter in which they are hiding is the same as that used for |
| Yorkshire pudding. | | | | | | | | | |
| | | | | | | | | | |
| 1 lb pork sausage patties | | 1 cup all purpose flour | | | | |
| 1 cup milk | | | 2 eggs | | | | | | |
| 1/2 tsp salt | | | | | | | | | |
| | | | | | | | | | |
| Preheat oven to 400 degrees. Cook sausage patties as directed on pkg; reserve drippings. Brush oblong |
| baking dish, 11 x 7 x 1 inch. with sausage drinppings. Place sausage patties in single layer in baking | |
| dish. Combine flour, milk, eggs & salt in blender jar. Blend at high speed for 2 or 3 sec. Turn off blender, |
| scarpe down the sides of the jar and blend again for 40 sec. (Or, in large bowlm, beat eggs & salt with an |
| electric blender until frothy. Slowly add the flour, beating constantly. Then pour in the milk in a thin stream |
| and beat till the mixture is smooth & creamy.) Pour batter over sausages. Bake uncovered until puffed & |
| golden brown, about 30 min. Cut into square. |
