Heaven and Earth is a German dish. Apples are the "heaven" and potatoes the "earth". It is an old | |

4 medium potatoes, peeled | | 2 tart cooking apples, peeled | | | | |
2 tsp sugar | | | 6 slices bacon, cut into 1 inch pieces | | | |
1 medium onion, peeled & sliced | 1 tsp sicer vinegar | | | | | |

Cut potatoes into 1 inch cubes. Core and quarter apples, then cut each quarter again, crosswise. In a |
large sauceapn bring 2 cups water & 1 tsp salt to boiling. Add potatoes, apples & sugar. Heat to boiling; |
reduce heat. Cover and cook till tender, 10-15 min. Drain. While potatoes are cooking, fry bacon until |
crisp; drain. Separate onion slices into rings. Saute in bacon fat until tender. Add vinegar to potatoes |
and apples and mix; taste and add salt and pepper as dsired. Pour into serving bowl and top with bacon |
