Heaven & Earth

Heaven and Earth is a German dish. Apples are the "heaven" and potatoes the "earth". It is an old
peasant recipe, usually served with sausages.

2 cup water				salt
4 medium potatoes, peeled				2 tart cooking apples, peeled
2 tsp sugar				6 slices bacon, cut into 1 inch pieces
1 medium onion, peeled & sliced				1 tsp sicer vinegar
pepper

Cut potatoes into 1 inch cubes. Core and quarter apples, then cut each quarter again, crosswise. In a
large sauceapn bring 2 cups water & 1 tsp salt to boiling. Add potatoes, apples & sugar. Heat to boiling;
reduce heat. Cover and cook till tender, 10-15 min. Drain. While potatoes are cooking, fry bacon until
crisp; drain. Separate onion slices into rings. Saute in bacon fat until tender. Add vinegar to potatoes
and apples and mix; taste and add salt and pepper as dsired. Pour into serving bowl and top with bacon
and onions. Serves 4-6.
