Apple Puffed Pancake | | | | | | | | | | | | | | | | | | | 6 eggs | | | | 1/4 tsp cinnamon | | | | | | 1 1/2 cup milk | | | 1/2 cup butter | | | | | | 1 cup flour | | | 2 Granny Smith apples, peeled and sliced very thin | | 3 tbsp sugar | | | 2-3 tbsp brown sugar | | | | | 1 tsp vanilla | | | warm maple syrup | | | | | | 1/2 tsp salt | | | | | | | | | | | | | | | | | | | | | Preheat oven to 425. Blend eggs, milk, flour, sugar, vanilla, salt & cinnamon in a large bowl. Batter may | remain lumpy. Add butter to a fluted 12 inch quiche or tart pan & melt in oven. Add apple slices to pan & | return to oven until butter sizzles BUT DOES NOT BURN. Remove from oven & immediately pour in batter. | Sprinkle with brown sugar & bake for 20 min. until all puffed & brown. Serve with warmed maple syrup. | Serves 6. | |
