| Lady Rose Pickles | | | | | | | | | | | | | | | | | | | | | | | 2 cup whole gherkins | | | 4 cup sugar | | | | | | | 1 1/2 cup tart apples | | | 1 cup diced celery | | | | | | | 3 cup chopped cucumber | | | 1/4 cup mustard seed | | | | | | 1/4 cup chopped sweet red pepper | | 3 cup diluted vinegar | | | | | | 2 cup chopped onions | | | | | | | | | | | | | | | | | | | | | | | | Combine cucumbers & onions. Add brine (1 quart water & 1/2 c salt) & allow to stand over night. Drain | well, wash. Add remaining ingredients & bring to a boil. | | | | | | | | | | | | | | Add paste, 1/3 c flour, 1/2 c mustard, 1 tbsp turmeric, 1/2 c water. Boil 3 minutes. | Bottle & seal in jars. Aprox. 6 quarts | |
