  | 1-1/2 cups flour  |   |   |  1/8 tsp salt  |   |   |   |   |   | 
  | 3 tbsp sugar  |   |   |  1 egg, at room temperature  |   |   |   |   | 
  | 2 tsp ground cinnamon  |   |  1/2 cup plain  yogurt, at room temperature  |   |   | 
  | 1-1/2 tsp baking powder  |   |  3 tbsp margarine  |   |   |   |   |   | 
  | 3/4 tsp baking soda  |   |  1-1/2 tsp vanilla  |   |   |   |   |   | 
  | 1/4 tsp ground nutmeg  |   |   |   |   |   |   |   |   | 
   |   |   |   |   |   |   |   |   |   |   | 
  | Preheat oven to 400 degrees. Spray eight muffin cups with nonstick spray or line with papers.  In a  | 
  | medium bowl, sift together dry ingredients. In a large bowl, combine remaining ingredients.  Beat on low | 
  | speed until blended. Stir in dry ingredients just until moistened.  Spoon batter into muffin cups.  Bake  | 
  | 12 min., until lightly browned.  Remove to a rack to cool.   Makes 8. |
