| Carrot Spice Muffins | | | | | | | | | | | | | | | | | | | 1 1/2 cup flour | | | 1/4 cup molasses | | | | | | 1 1/2 cup natural bran | | 1/4 cup oil | | | | | | 1/4 cup wheat germ | | 1 1/2 cup milk | | | | | | 1/2 cup packed brown sugar | | 2 tbsp vinegar | | | | | | 2 tsp baking soda | | | 1 cup grated carrot | | | | | | 1/2 tsp salt | | | 1/2 cup walnuts | | | | | | 1 tsp cinnamon | | | 1 cup raisins | | | | | | 1/4 tsp nutmeg | | | 2 eggs | | | | | | | | | | | | | | | | | | Combine first 8 ingredients in a large bowl. Make a well in the center. Beat eggs in a separate bowl. Add | all remaining ingredients & stir to mix. Pour into well. Stir until moist. Fill muffins cups 3/4 full. Bake at | 400F oven for 20 to 25 minutes. Makes 36. | |
