  | 2 heads romaine lettuce, washed and dried  |  1 Bermuda onion, thinly sliced  |   |   | 
  | 4 white grapefruit, sectioned, piths removed  |   |   |   |   |   |   | 
   |   |   |   |   |   |   |   |   |   |   | 
  | Dressing:  |   |   |   |   |   |   |   |   |   | 
  | 1 cup apple juice  |   |   |   |  2 tbsp honey  |   |   |   |   | 
  | 6 tbsp lemon juice  |   |   |  1 tbsp poppyseeds  |   |   |   |   | 
  | 1/4 cup Dijon mustard  |   |   |  1 tsp pepper  |   |   |   |   | 
   |   |   |   |   |   |   |   |   |   |   | 
  | Tear lettuce into small pieces. Arrange on plates; top with grapefruit  sections (1/2 grapefruit per plate) | 
  | and onion slices.  Mix dressing ingredients until smooth. Top each salad with 2 tbsp dressing. |
