Joe's Turkey Mashed Potato Soup
1 tablespoon butter 1 small to medium onion, peeled & diced 1 cup sliced mushrooms 3 leftover cooked carrots finely chopped up 1/2 teaspoon thyme, or poultry seasoning 4 cups (32oz) Swanson low salt Chicken Broth 3 cups leftover mashed potatoes 2 cups leftover turkey meat, chopped/diced
In a large saucepan, melt the butter, add onions & mushrooms & cook till onions get clear (about 5 minutes over medium heat). Add carrots and thyme, then stir in broth and mashed potatoes, stir thoroughly and heat through. Add turkey and warm over low heat for about 10 minutes. Add salt & pepper to taste.
Serve steaming hot with hot rolls or biscuits. |
