Here's our traditional holiday brunch. We prepare it the night before and then stick it in the oven the next morning to bake while we are (in our case) opening our Christmas gifts. We add some biscuits and orange juice and we are full for most of the day. Then later we just have light sandwiches and miscellaneous holiday treats.
BREAKFAST SOUFFLE
1.5 lb bulk sausage (I actually use canned ham and leave out the salt because I am lazy and don't want to brown the sausage) 9 eggs, slightly beaten 3 cups milk 1.5 tsp dry mustard 1 tsp salt (none if using canned ham) 3 slices white bread (cut in 1/4" cubes) 1.5 c grated cheddar cheese
Brown and drain sausage. Mix eggs, milk, mustard, salt: stir in bread, sausage and cheese. Pour into greased 9"x13" pan. Refrigerate overnight. Bake, uncovered at 350 for one hour. Cut into squares. Serves 12. Can add mushrooms, etc.
