No need for dessert with this one!
3 cups cooked Sweet Potatoes, mashed
1/2 stick melted butter (unsalted is best)
1 cup Sugar
1 cup Coconut
1 teaspoon Vanilla
dash of Salt
Topping
1/2 cup light Flour
1 cup light Brown Sugar
2/3 stick Butter
1 cup Pecan pieces
Add melted butter to potatoes. Stir in sugar, coconut, vanilla and salt. Pour into a greased baking dish.
For the topping, mix flour and sugar. Cut in the butter until all mixed. Add nuts and sprinkle mixture on top of potatoes. Bake at 325° for 30 to 45 minutes.
