This is my boyfriend's favourite snack :-
Ingredients
4 large potatoes
1 onion
2 eggs
2 tablespoons fine matzo meal
½ teaspoon baking powder
Salt and black pepper
Oil for frying
Method:
Peel and grate potatoes, and onion.
Mix together in a bowl and add the eggs (beaten), matzo meal and baking powder adding salt and pepper to taste.
Heat oil in frying pan, drop spoonfuls of potato mixture in and fry until golden brown on both sides.
Drain well and serve hot. |
