Apple Oat Bake
3 tart apples, such as Granny Smiths, cored, pelled, and sliced
1 cup rolled oats
1 cup whole wheat pastry flour
3/4 cup apple juice
3/4 cup vanilla soymilk
1/4 cup maple syrup
1/2 cup raisins or currants
1/2 cup chopped walnuts
1/2 tsp. cinnamon
1/2 tsp. nutmeg
Preheat the oven to 350.
Combine the oats and flour in a large bowl; add the apple juice and soymilk and whisk until smooth. Add the raisins, walnuts, cinnamon, nutmeg, and maple syrup. Put half this mixture in the bottom of a lightly oiled 8 X 8-inch pan. Place half the apples on top of this, then the other half of the oat mixture, followed by the apples again.
Sprinkle with a little more cinnamon, and bake for 20 minutes.
