Texas Style Salmon Patties
1 can pink salmon (drained)
1/4 cup each chopped onion & bell pepper
2 eggs beaten
2/3 cup crushed crackers or breadcrumbs
1/4 cup crushed red pepper (optional)
1/2 cup canola oil for frying patties
1. Remove any visible bones and skin from salmon. Combine the drained salmon, onion, bell pepper, eggs, crushed crackers, and red pepper in mixing bowl. Shape the salmon mixture into 8 patties the size of hamburgers patties.
2. Add oil to a large skillet and heat for 3 minutes over medium heat. Fry 4 patties at a time 2 or 3 minutes per side. Place on paper towels to drain and serve.
