Cranberry Salsa

Ingredients
1 large orange, ashed and roughly chopped
480g fresh or thawed frozen cranberries
2-3 tbsp icing sugar, or to taste

Method
1. In a food processor, blend the whole washed chopped orange until almost a pulp. Add the cranberries and sugar and continue to blend until the cranberries have been finely chopped.

2. Spoon the cranberry salsa into a bowl or serving dish, cover and refrigerate until required. This will keep in the fridge for a several days.

Cranberry Sauce
 
340g Cranberries
170g caster sugar
1 orange, juice and zest
 
1. Place the cranberries, sugar and orange juice together in a saucepan and bring to the boil.

2. Simmer the mixture over a gentle heat for about 10 minutes or so, until the berries begin to burst. Remove from the heat to ensure that the berries hold their shape.

3. Taste the sauce for sweetness; you may need to add a little more sugar.

4. Gently fold in the orange zest, taking care not to break up the berries. Transfer to a bowl and leave to cool. Cover with cling film and refrigerate until ready to serve.
