I love doing this because you don't have to have a pressure cooker to do it! This is the way I can all my peppers and my family loves them.

  • Peppers---enough to fill how ever many pint jars you have.
  • white distilled vinegar
  • water
  • salt
  • two boilers (saucepans)
  • tongs
  • a towel
 
First of all make sure you wash your jars--even if they are new...
 
Place your towel on your counter top.
 
Wash your peppers then cut them up the way that you like...add them to your jars. Add 1/8 teaspoon salt to each full jar.
 
Add water to one of the boilers and let boil...
 
Add vinegar to the other pot and heat just to boiling. (I usually do enough for one jar at a time...). Pour over your peppers (almost, but not quite full). Leave a little headroom.
 
Place one of your lids(both pieces) into the boiling water, just long enough to get it hot..remove it (with tongs) and screw it on your jar firmly...then immediately turn you jar upside down on the towel..
 
Do all of your jars this way...leave them upside down on the towel until cooled or overnight...
