Pierogi Casserole recipe
1/2 pound elbow macaroni
4 cups mashed potatoes
3 tablespoons grated cheddar cheese
2 tablespoons minced dried onion
12 slices American cheese
2 tablespoons margarine
1/2 pound butter
4 large onions, sliced
Mix together the mashed potatoes, grated cheese and dried onions.
Saute the sliced onions in a large pan in the margarine and butter.
Butter a 2-quart casserole and layer the ingredients, starting with 1/3 of macaroni, 4 slices of American cheese, 1/3 potato mixture and half the sauteed onions. Repeat the layering 2 more times, ending with the potatoes. Dot with butter and sprinkle with grated cheese.
Bake at 350 degrees F for 30 minutes.
Serves 10 to 12.
