~Roasted Turkey~
Prepare turkey for roasting by removing all the innards(they are in a bag) and removing the neck from the neck hole. Wash carefully inside and out. Wipe dry. Season the inside with salt and pepper. (Add stuffing now) Pull skin of neck over the back. Fold the wing tips under. Press wings and legs against the body of the bird. Rub outside of the bird down with unsalted butter. Place in roaster. Do not cover. Cook at 300 degrees until tender. Do not baste. Allw 25 minutes per pound of bird for roasting.
~Stuffing~..................to put in bird above
- 2 cups soft bread crumbs
- 1/2 tsp chopped parsley
- 2 TBSP melted butter
- salt, pepper and sage
- 3 TBSP finely diced celery
- 1 tsp chopped onion
- 2 tsp poultry seasoning
- water
Mix all ingredients, adding enough water to make stuffing pack easily. (You may add a beaten egg if desired)
