Chilaquiles for Breakfast
Ingredients
12 corn tortillas 1 medium onion sliced (Sweeter types are better) salt and pepper small can tomato sauce 2 tbsp cooking oil
Regional Cheese* you can use Monterrey Jack, or any other cheese that melts.
Procedure
Cut the tortillas into small cubes or triangles (about 1 inch). In a saucepan sauté the tortilla pieces and onions in oil until the onions are tender. Add tomato sauce and stir. Add sauce until the mixtures tastes good to you. Add salt and black pepper to taste. Add chunk of cheese to taste ... stir until cheese softens. Serve hot. _________________ |
