Fozzie's Cucumber Salad recipe

 

4 cucumbers, peeled leaving a few lines of peel for interest
1 large onion, cut in half and sliced very thin
Salt
Fresh black pepper
Red wine vinegar
Sour cream
Sugar
Fresh dill, chopped (optional)

Slice cucumbers very thin. Spread out over counter. Spread sliced onions over the cukes (ratio of cukes to onions is about 2 to 1). Season with salt and pepper. Let set on counter about 1-2 hours.

Mix this cuke mixture with your hands and take handfuls and squeeze out as much liquid as you can and place in a bowl. Add approximately 1/4 cup red wine vinegar, starting out with less and add more if you need to. Add approximately 12 ounces sour cream, again adding gradually. Sprinkle approximately 1 tablespoon of sugar over, adding gradually. You have to taste periodically to get the right blend of vinegar, sour cream and seasonings, adding as you go. It tastes best the next day as ingredients meld.
