This is a Weight Watcher Recipe.....its very good. My family loves it. It serves 6 and each serving is 10 points. ~Baked Potato Soup~ - 2/3 cup light butter/margarine
- 2/3 cup all purpose flour
- 7 cps skim milk............(I use powdered-milk milk for this recipe)
- 4 large baking potatoes, baked, cooled, peeled and cubed
- 12 bacon strips, cooked, drained and crumbled
- 1 1/4 cup lowfat shredded cheddar cheese
- 1 cup fat free sour cream
- 3/4 tsp salt
- 1/2 tsp pepper
- 4 green onions, sliced
In large soup pot, melt butter/margarine; stir in flour; heat and stir till smooth. Gradually add milk stirring constantly until thickened. Add potatoes and onions. Bring to a boil; stirring constantly. Reduce heat; simmer 10 minutes. Add rest of ingredients; stir untill cheese is melted. |
