Tortilla Soup Ingredients 1 store roasted chicken 2 32 oz. carton chicken broth 1 14 oz. can diced tomatoes 1 4.5 can chopped green chilies 1 Tbsp. taco seasoning 1 tsp. corriander 1 small onion chopped 2-3 cloves garlic minced 1 cup corn 1 package corn tortilla strips
Directions Start off by shredding chicken, set aside. In a blender, place tomatoes, chilies, garlic, onion, spices (adding more or less spices as your families tastes dictate.) And enough broth to help liquefy everything and blend until smooth. Place Chicken, remaining broth and contents in blender into a stock pot and place on medium low heat. While this is heating, microwave frozen corn for about two to three minutes. Serve over tortilla strips, adding cheese, Pico or salsa, and sour cream if you like.
