The recipe is one from the slimming magazine which accompanies the plan I am following.
 
I don't know if you can buy Laughing Cow triangles, if not use any low fat soft cheese ... 12 triangles would be equivalent to 210 grams.
 
 
Cauliflower Cheese Soup
 
Serves 2
 
1 onion
Fry light spray oil
½ tsp paprika
1lb 4ozs/567g small cauliflower florets
1¼ pts/710mls stock made with chicken Bovril (I used Marmite)
¼ pt/142mls semi skimed milk
12 Extra light Laughing Cow triangles (or 10 light)
salt & freshly ground black pepper
shredded spring onion to garnish
 
 
  1.  Peel and finely chop the onion. Spray a large pan with Fry light and sauté the onion for 5 minutes over a medium - low heat until softened.
  2. Add the cauliflower and stock, bring to the boil, cover and simmer for 15 minutes. Add the milk and simmer for a further 5 minutes. Stir in the Laughing Cow triangles, transfer to a food processor and blend until almost smooth.
  3. Pour the soup back into the pan, season well and reheat. Serve garnished with a little paprika and some shredded spring onion.
